Macheteadas

Macheteadas are like a fried pancake.  Another breakfast item, it goes well with coffee or milk.  My mom doesn't make these very often, but when she does, its always a special treat.  Hope you enjoy!
Special thanks to my sister-in-law, Priscillia, for helping my mom with the format of the recipe and the picture taking :)

Ingredients: Makes approximately 16
vegetable oil for frying
3 1/3 cup of all purpose flour
1 egg
1 tablespoon of baking powder
1/2 cup of sugar
1/2 cup of milk

Directions:
Mix all the ingredients by hand in a medium size bowl. Knead the dough on a floured work space until dough is smooth.
Divide the dough into sixteen round balls.  Stretch each ball into a flat circle and with a knife make two 2 inch vertical cuts in the middle.  Make sure the oil is hot before placing one to fry.  With the helping of a fork, fry them until golden brown on both sides.

Place on top of paper towels to drain off excess grease.

Enjoy!!!

Cafe con Pan!

Traditionally Hondurans wake up and immediately want to drink coffee and have homemade bread to dunk it in.  While my mom is whipping a recipe for our next posting I decided to go ahead and share her amazing coffee bread recipe with you.  I have made this myself numerous times so I can say from experience its rather simple.  Most of the ingredients you should have on hand.

Ingredients:

2 cups of sugar
3 1/2 cups of all purpose flour
3 sticks of margarine
2 tablespoons of baking soda
6 eggs
1 tablespoon vanilla
1/2 teaspoon salt
Preheat oven to 350 degrees.

With an electric beater on medium/low speed, mix the sugar with the margarine.  Stop beating once the consistency is smooth.

Add three eggs then continue to mix.

One cup at a time add the flour while continuously mixing.

After the addition of all the flour mix in the remaining three eggs, vanilla, baking soda, and salt.

Once all the ingredients are well mixed, pour the batter into baking containers.  Bake for 30 minutes. Makes one 9x9 and 12 little cupcakes.  Half the recipe will make 12 little cupcakes.

Ingredientes:

2 tasas de azucar
3 tasas y media de harina
3 borras de margarina
2 cucharadas de soda
6 huevos

Pon tres huevos y sigue batiendo.

Growing up, my mom used to make the BEST meals.  Now that I am a mother myself, I want to be able to cook the traditional Honduran meals for my daughter.  I want her to be just as excited about dinner as I was!  The only thing stopping me from learning my moms recipes is distance.  My mom  unfortunately lives in Pennsylvania, while I live in Iowa with my husband and daughter, Chloe.  I ask her almost everyday for a specific recipe and she tries her hardest to teach me.  What I have found out throughout time is that its almost impossible for me to learn how to make something with out pictures and a clear recipe.  And so "Honduran Cooking" was born!  We want to provide a resource for learning for those who wish to dive into the deliciousness of Honduran cooking.  My mom will be taking step my step pictures of a meal she is preparing and will relay the recipe to me.  I will then organize the pictures and information so that everyone may follow.  I am eager to dive into this new adventure along with my best friend.  Hope you all check back soon for the first recipe!!!

<3 Sandra and Daughter

Sandra y Hija
